Rachael & Andy's wedding

Rachael & Andy approached us with a beautiful concept for their Wedding day, which was to have the reception in the backyard of their home under a beautiful styled marquee. They wanted a relaxed canape brunch recpetion for all of their family followed by a more formal canape dinner in the evening for close friends, after their ceremony.

Furthermore most of their family were gluten intolerant so I took on the challenge of creating two entirely gluten free menu's, including my own mini gluten free mini bread buns for the burgers and a family recipe from Rachael for the scones. It was a briliiant day, planned and executed briliantly, which both myself and my staff were thrilled to be a part of.

GLUTEN FREE BRUNCH MENU:
Mini prosciutto & brie fritatta topped with sour cream & dill
Mini scones with jam & vanilla bean whipped cream
Homemade GF pork, fennel & caramelised onion sausage rolls
Mini creamy poached chicken cocktail sandwiches
Leg ham & provolone finger sandwiches

GLUTEN FREE DINNER CANAPE MENU:
Lamb kofta with green apple and mango relish
Prawn ricepaper roll with vietnamese dipping sauce
Chicken meatball skewers with sesame soy dipping sauce
Coconut prawns with wasabi mayonnaise
Smoked salmon mousse served on cucumber rounds with lemon zest & dill
Tarragon chicken with japanese dipping sauce
Crispy fried squid 'kara age' served with japanese mayonnaise
Herbed goat cheese, tomato & chilli jam tartlets topped with basil
Gorgonzola arancini with dijon mustard
Noodle Box: Italian beef meatballs in a rich tomato sauce served on quinoa
